My Healthy BreakfastLove, With F&N Seasons NutriSoy

We are an active family. Well, I do like to think we are. ^^

Weekends are usually filled with some outdoor activities so breakfast is never skipped on weekends. It may be home-cooked (though be quite lazy to do so lately; both the mommy & daddy. Hahaha) or bought.
This used to be the standard home-cooked breakfast in this household. Would be much better if paired with a tall glass of F&N Seasons NutriSoy, don't you think? ^^

Remember I attended the Cooking Demo with F&N Seasons NutriSoy Breakfast Love which I blogger earlier? If you don't click here to read. ^^

I learn and was assured that breakfast need not be too complicated and for me & family, a simple breakfast especially while on the go is just fine.
A pack of F&N Seasons Nutrisoy with bread and peanut butter is a good choice. Or a nice plate of sandwiches. Or with a bowl of cereal. (or Mee Goreng. or Nasi lemak. Maybe even while having roti canai at the Mamak? I bet Mamak have F&N Seasons NutriSoy stocked up!) :-)

The important thing is DO NOT SKIP BREAKFAST! At least have a glass (or a can or a pack) of F&N Seasons NutriSoy to keep you going. Have a healthy start for the day.

I try to incorporate protein for recovery food after our weekend run or hike - Gunung Nuang hike for a picnic, anyone? ^^ - as "recovery food".

I only shared two recipes in my previous post and here's two more recipes that I learnt during the Breakfast Love Cooking Demo with F&N Seasons NutriSoy.

Mushroom Omelette With Roasted Tomatoes

Ingredients :
150g mushrooms, wiped and chopped
1 tbsp oil
2 tbsp butter
Pinch of salt and pepper, as per taste
Parsely, as per taste (secukup rasa, as we Malay say it. Hehehe)

4 eggs, lightly beaten
2 tbsp butter
Pinch of salt and freshly ground black pepper, as per taste

4 tomatoes halved
1 tbsp olive oil
Pinch of salt and pepper, as per taste

Method:
Pre-heat oven to 180C. (Or just grill it on a grill pan like how the chef did in the photo above. Can do also ^^)

Place the tomatoes on a baking tray, lightly drizzle with olive oil, sprinkle with salt and pepper. Place in the oven to roast.

In a frying pan heat the oil and butter until the butter is foaming.  Add the mushrooms and sprinkle with a touch of dried parsley, salt and pepper, sauté for approximately 4-5 minutes until the mushrooms are cooked. Remove from heat and set aside.

In another pan, heat butter. When the butter is hot, swirl it in the pan, add the eggs, allow to cook for about 2 minutes.&nbsp

Place the mushrooms in the middle of the omelette.

Allow to cook for a few minutes.  Roll the edges over the mushrooms, gently turn the omelette over so the seam is face down in the pan.  Allow to cook for a further 2 minutes or so.

Gently ease the omelette onto a plate.  Remove the tomatoes from the oven, scatter over the top of the omelette along with any leftover mushrooms and a sprinkle of salt and pepper.
How about coupling a glass with F&N Seasons NutriSoy with a yummylicious omelette?

The lovely thing about soy milk for me is, since its not dairy and lactose free; consuming it on empty stomach doesn't cause problem. I do have problem sometimes when I consume milk.

Homemade Banana and Walnut Muffins with dark chocolate
Ingredients
250g Plain Flour
1 + 1/4 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Cinnamon Powder
50g Sugar
50g Brown Sugar

110g Egg (2 eggs)
200g Melted Butter
460g Ripe bananas (Pisang Berangan), mashed well
Handful Walnuts, roughly chopped
200g Dark chocolate, melted

Method :
Preheat oven to 180C.

In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Set aside.

In a medium-sized bowl, combine the mashed bananas, eggs, melted butter and cinnamon powder. Lightly fold wet ingredients (banana mixture) into the dry ingredients until just combined and batter is thick and chunky. (The important thing is not to over mix the batter. You do not want to make the batter smooth. Over mixing will result in tough and rubbery muffins).

Spoon (or pipe in, as shown here) the batter into muffin moulds and sprinkle some chopped walnuts over.

Drizzle the melted chocolate over the top.

Bake in preheated oven for 25 minutes or until cooked.

And here's some very simple and easy recipes I did at home.

Son was pretty excited, he even got into action and helped Mommy! ^^

Banana Peanut Butter Soy Smoothie
Ingredients
1 banana (frozen or fresh)
2 tbsp peanut butter
1 cup F&N Seasons NutriSoy

Method
Blend everything until smooth
Yummm! 

Banana. Peanut butter. F&N Seasons NutriSoy. Definitely a great boost after a long weekend run. Or for Son's active weekend. ^^

Or... for a more filling glass of smoothie; add some oatmeal to your smoothie mix. Blend the oatmeal until powdery for a smoother drink. A dash of cinnamon thrown in the mix wouldn't hurt either.

And wallah! A protein shake! This alone can be a very healthy and hearty breakfast. :-)

F&N Seasons NutriSoy Breakfast Burrito
Ingredients
3 eggs
Butter/margarine
1/4 cup F&N Seasons NutriSoy
2 large soft tortilla
Salsa

Method
Beat together eggs and F&N Seasons NutriSoy until fluffy
Heat frying pan over medium/low heat and melt the butter
Pour the egg/F&N Seasons NutriSoy mixture into the pan and stir until cooked
Divide cooked eggs equally for the two tortillas.
Sprinkle salsa
Wrap tightly and enjoy!

We can either use store-bought bottled salsa or fresh made ones.

The classic tomato salsa preparation would be :
4 large ripe tomatoes, blanched and diced small
1/2 small sweet onion, minced
2 cloves garlic, minced
1/2 bunch fresh cilantro, chopped
1 jalapeno pepper, seeded, minced fine (we used capsicum this time, which is lightly grilled before dicing it)
1 tablespoon fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon vegetable oil
Salt and sugar to taste
In a large bowl, combine all the ingredients and mix well. Best if chilled for an hour before being served. May be made up to eight hours ahead.
Such healthy yet very easy breakfast, right? Especially when paired with a glass of F&N Seasons NutriSoy. As obviously seen in the photos, apart from eggs, we had some sausages (those aren't frozen sausages by the way) too for our burrito breakfast.

What a healthy start!

I made a bowl full of salsa and I told my boys to leave some so that we can eat them later too, but the boys went on and wipe-clean all of it! Don't you just love it when they eat veges without much trouble?

  6. breakfast is a MUST for the day, to get you started for your activities.. so i do not mind to have heavy breakfast, instead i would say i LOVE heavy breakfast!! put me in breakfast buffet and i would take all the sausages, cuts, bacon, eggs, beans, grilled veggie, toasts etc etc.. and that explains why i so love your first photo - sunny eggs and baked beans served with corn and broccoli!! fuyoh, sedap!!

  24. This is really my type of yummy breakfasts. I made a rare breakfast last Sunday and Letchumy told me to do that every Sunday to save time and $$. She asked me how I could fry perfect looking bulls-eye telor! Aha! That's Anay's secret.
